Make your own chocolate cream with salted caramel!

Do you think chocolate is heavenly? Then this recipe is for you! It’s tasty and doesn’t require much preparation. So ideal as a dessert after dinner! Or, for example, as dessert for a date at your home!

Ingredients for the chocolate cream:

  • 1 vanilla pod
  • 150 grams of vanilla sugar
  • 20 cl of cold whole milk
  • 30 cl liquid cream
  • 5 egg yolks
  • 170 grams of dark chocolate (minimum 64% cocoa)

Ingredients for the caramel:

  • 150 grams of granulated sugar
  • 2 pinches of salt

Other things you need:

  • Sieve
  • Kitchen thermometer

Steps to follow:

  1. Prepare the chocolate cream: cut the vanilla pod in half (lengthwise) and scrape out the seeds with the end of the knife. Then mix the vanilla seeds with the vanilla sugar (50 grams).
  2. Put the milk, cream and empty vanilla pod in a saucepan and bring to a boil. Once it boils, turn off the gas and let it sit for 30 minutes.
  3. In a bowl, mix the egg yolks with the vanilla sugar (100 grams) and beat until the mixture lightens and “doubles in volume.”
  4. Pour the drawn milk through a sieve over the sugar-beaten eggs and then return everything to a new saucepan.
  5. Bring the mixture to a boil over low heat, stirring. The cream should stick to the spatula and the cream shouldn’t spring back when you run your finger through the mixture (the cream will then be 83Ā°C when you measure this with the kitchen thermometer).
  6. Pour the cream into a bowl. Add the chopped chocolate to the cream and stir well. Make sure that the pieces of chocolate melt and that the cream equals in thickness and shape.
  7. Divide the cream into small bowls and then put them in the fridge for at least 4 hours.
  8. Meanwhile, prepare the caramel pieces: place a sheet of baking paper on a cutting board and sprinkle the sugar in a small (frying) pan. Let it cook over medium heat until it turns into golden brown caramel.
  9. Pour the caramel onto the baking paper and sprinkle with the salt. Then let it solidify.
  10. Chop the caramel into pieces and sprinkle it over the bowls with the cream. The dessert is ready!
